I don't think Helo ever stopped loving Sharon, even after he found out she was a cylon. His love and commitment to her is tested time and time again, and each time Helo comes through for Sharon with flying colors, as she does for him.
The first time their love is tested is on Cylon-Occupied Caprica. Starbuck arrives to find the Arrow of Apollo and runs into Helo and Sharon. Realizing what Sharon is, Starbuck wants to kill her. Helo doesn't let her though, and goes as far as to stand in front of the gun. He says he doesn't want Starbuck to kill her because she is carrying his child. I think it's a lot more than that, though. I think Helo doesn't want to let go of what he and Sharon had before he found out she was a cylon, because he loved Sharon for a long time and had just recently been able to act on that love. Furthermore, Sharon proved herself to Helo by abandoning her people and helping him escape. Even though at this point in the series he wasn't admitting to Sharon that he loved her, to Starbuck he defended her with everything he had.

Sharon's turn to prove herself to Helo again came soon after. She stole Starbuck's raptor, in my opinion to save her life as she knew Starbuck wasn't coming around to the idea of her being good. She could have ran back to the cylons or took off to a remote location to have her baby, but she didn't. She kept tacking Helo from afar, making sure he was safe. When Starbuck is kidnapped and in the farm, Sharon comes back to Helo offering assistance and intelligence, as she knew where Starbuck was being kept.
You're the father of my child, Helo. I'm not going to lose you.
Those are just two examples in the beginning of their relationship, but Helo and Sharon prove their love for one another again and again throughout the series. A strong example is Helo saving her during her rape. Also, when Roslin wanted to terminate Sharon's pregnancy, Helo begged Adama to let him take Sharon off in a raptor away from the fleet to live and have their baby alone.
Like Sharon is in his, Helo and her baby become the most important things in Sharon's existence. Even others are able to see that after Helo and Sharon join the fleet. Roslin even used her love against her, threatening to throw Helo out the airlock if Sharon didn't help her find the Tomb of Athena. Most others think their love is sick, as not many people were able to see Sharon as more than a thing. Others like Starbuck and Admiral Adama are able to eventually see Sharon as one of them and come to not only acknowledge their relationship, but to see it as no different than a relationship between humans. That's a really cool thing.
